Kopi Luwak is coffee produced from coffee beans eaten by civets. Because it is not digested perfectly, the civet droppings that are excreted are still in the form of whole beans. In the civet digestion process, proteolytic enzymes are absorbed into the beans, splitting the coffee proteins, so that many free amino acids are produced. As a result, the taste and aroma of kopi luwak are richer than regular coffee. The fermentation that occurs during digestion also reduces the bitter taste of kopi luwak.
