KOPI GAYO WINE adalah trend terbaru dari Kopi Gayo. Masyarakat Aceh menamakan proses pasca panen ini dengan nama “Proses Wine”, yakni melalui proses natural fermentation. Hasilnya adalah kopi arabica yang sangat aromatic, dengan aroma fruity dan wine yang sangat manis dan memikat.Namun jangan kuatir, KOPI GAYO WINE tidak mengandung alkohol. Perlu diketahui bahwa alkohol menguap pada suhu 80 derajat celcius, sedangkan KOPI GAYO WINE disangrai hingga 200 derajat celcius lebih. Kopi GAYO WINE adalah kopi arabica yang berasal dari Jagong Jeget (1560-1680 mdpl), Aceh.
